Stuffed Butternut Squash - Plant Based

Today I was in the mood to try new plant-based diet recipes and ended up creating my own. Remember everyone should always try to eat a plant based meal once a week. Maybe set a goal for making a plant based meal on a Monday? I know often this diet has a connotation with being gross but, it is actually delicious. So with that said, here is what I did to make this delicious Stuffed Butternut Squash. It only took 1 hour!

Ingredients:

  1. Butternut squash

  2. 3 avocados

  3. Red chilli flakes

  4. Sour cream

  5. Butter

  6. Kosher salt

  7. Chick peas




Preparation:

  1. Preheat the oven to 400F

  2. Scrub the outside of the squash clean and cut each in half down the middle from the stem to the root end

  3. Scoop out the seeds and place on a baking sheet so the inside of the squash is facing up

  4. Melt 1 tablespoon unsalted butter and brush a little on each squash

  5. Sprinkle each squash with a pinch of kosher salt in the over for 50-60 minutes or until very soft when pierced with a fork

  6. While the squash is in the oven start masking your avocados with lemon

  7. When squash is nice and soft remove it from the oven and allow it to cool

  8. Scoop out the inside leaving a nice border all the way around.

  9. Enter the avocado

  10. Add onto the sour cream

  11. Add your chickpeas

  12. Add hot sauce onto desired areas
